Try this healthy dish full of greens, tasty turkey, and flavorful spices! You can also make it vegan if you prefer by leaving out the meat.

Preparation
- Place all ingredients except greens into large saucepan and bring to boil.
- Prepare greens by washing thoroughly and removing stems.
- Tear or slice leaves into bite-size pieces.
- Add greens to turkey stock. Cook for 20-30 minutes until tender.
Note: My special needs son loves to cook (mostly microwaveable items and easy prep items) but he has started watching YouTube videos of his favorite foods that he would love to learn how to cook by himself. We live in a digital world and these accommodations are really a huge step forward. Sometimes all it takes is a little patience and before you know it, your autistic adult son or daughter will be cooking you a five-course meal ;-).
