Fiesta Salad

Combine these ingredients to make the dressing:
3 tbsp. olive oil
1 tsp. red wine vinegar
1/4 tsp. cumin
1/2 tsp. chili powder
salt and pepper to taste
cayenne to taste
1 small clove garlic, mashed

Add these ingredients to the dressing:
2 cans whole kernel corn, drained
2 cans black beans, drained and rinsed
1 red bell pepper, diced medium
2 Roma tomatoes, diced
1/2 red onion, finely chopped
4 green onions, chopped
3 tablespoons cilantro, finely chopped
Toss all ingredients together with the dressing.

I usually have my autistic son watch me create these recipes (really any recipe that is pretty easy and not so many steps), so that the more I make them, the longer that they will stick to his memory. So eventually he would be able to start making them himself. It is so worth it. The more you cook, especially if it is a recipe that you create often, then you can slowly incorporate your autistic son or daughter’s participation so that in time they can perform the recipe independently. Priceless.
